The Holiday Bikini – The Method
WHere is a home-style take on a cocktail from the seasonal cocktail list. This is a batch premix which is loaded full of flavours of the Christmas time, which makes it perfect for a festive gathering. Reserve the remaining syrup to use in breakfast cocktails, puddings, or for another batch of bikinis.
The Bikini Cocktail
Yields 10 people
For the Citrus Syrup (makes 750ml)
300ml newly squeezed clementine juice
200ml fresh lemon juice
500g caster sugar
Ingredients for the Premix (makes 850ml, enough for 10)
400ml good quality vodka
100ml dry gin
150ml peach-flavored liqueur
200ml clementine cordial (from the recipe above)
Fresh cranberries, to garnish
Mandarin essential oil, for finishing
Method
Making the Cordial: Place all the items in a saucepan, bring to a gentle boil, agitating until the sugar dissolves. Then, take off the burner and let it to cool completely. Transfer into a sterilised bottle, close it and store chilled, it will last for up to a month.
Preparing the Batch Mix: Combine all the liquid ingredients in a sizeable container, allow it to infuse for 60 minutes, then filter it best through a fine cloth, to ensure it's perfectly clear.
For serving: Add 85ml of the cocktail base into a mixing glass containing ice, and stir lightly for a minute to chill. Filter into an frosted cocktail glass or a similar vessel, decorate with a few cranberries adding the final touch using a light spray of mandarin oil over the drink.
